Chicken Bagel Recipe

Let's change from the traditional sandwich and have a bagel instead. This crispy and unctuous chicken salad bagel will become your new summer's lunch favourite!

Ingredients
  

  • 1 Chicken breast
  • 3 Leaves of romaine lettuce
  • 2 Wholemeal sesame bagels

Dressing

  • 3 tbsp Mayonnaise
  • 1 ½ tbsp Ketchup
  • Salt and pepper to taste

Instructions
 

  • Cut the chicken breast in half lengthwise
  • Cook the chicken breast in a pan for 5 minutes on each side
  • Cut it into small pieces
  • Shred the romaine lettuce into small pieces
  • Cut the bagel in half horizontally
  • Spread the dressing on the bottom half
  • Add pieces of grilled chicken breast
  • Cover with shredded romaine lettuce
  • Add salt and pepper to taste
  • Cover with the top half

Dressing

  • In a bowl, add 3 tbsp of mayonnaise, 1 ½ tbsp of ketchup, salt and pepper
  • Mix until combined

Notes

Here are a few tips:
  1. Cut the chicken breast in half lengthwise. It is easier and quicker to cook 
  2. You can swap the chicken breast for turkey breast, it's delicious!
  3. You can sprinkle parmesan shavings on top of the chicken
  4. You can add some slices of black olives
  5. If you wanted to go for the traditional caesar salad sauce, you would need one 0% fat yoghurt, 1tsp of honey, 1tps of mustard, salt and pepper to taste. Mix until combined. As it is more liquid than the sauce used in this recipe, you could keep the sauce separate and add it just before eating to avoid soften the bread
  6. If you prepare too much food, you can keep it in the fridge for an additional 24 hours but no more because of the mayonnaise
